Slow food is a cheffy-foodie term which is usually used when referring to food that is slow cooked and is also applied to ‘budget’ recipes that use cheaper cuts of meat that benefit from long slow cooking.
I’ll be using this new section to collect and share my favourite ‘tried and tested’ slow foods – including great classic British dishes (brisket, shin-beef casserole, glazed ham hocks and more) that are now beginning to re-appear on TV cookery shows (sign of these straitened times I guess). Also to come – dishes from further afield including several variations of the Chinese braised pork belly, slow roast Italian style leg of lamb and pork, American influenced pork ribs and of course curries.

Great idea this. It is always difficult to thin of varied things to cook especially for a hungry family and some of the ideas here and elsewhere on your site have given me some great ideas so thak you!
